I've been working on this recipe for a while, it will work with fish but man sometimes I crave Carne...
Carne Asada Street Tacos
2 lb flap steak or top sirloin, it doesnt matter what the cut is, it just matters that it is thin
1/2 C lime juice (I use the bottled stuff in the fridge because it's easy and ready, but fresh lime or orange juice is always preferred).
1/2 C olive oil
Carne Asada salt mix or in a pinch Lawrys Seasoned Salt. It's well worth it to have the carna asada salt mix in your pantry.
Onion Salt
Corn Tortillas
Salsa Verde
½ C chopped onions
½ C chopped cilantro
The most important thing is that the meat is precut thin, less than 1 cm thin is optimal.
Take the meat and rub lime juice onto it until it is covered
Once the lime juice soaks in rub in the olive oil
Once the olive oil is rubbed in add the seasoned salt
Add Onion salt to the meat and roll the meat up. Let sit in fridge for a few hours to marinate. I roll it because if it sits on top of each other sometimes the marinade rubs off.
When the meat is done marinating, cook on the grill medium temp until it is done, then put on high to give it some char
Cut meat into small pieces. Prep the onions and cilantro. Grill the corn tortillas. Put it all together and try not to eat more than 10.
